1 cup dried yellow peas (soaked overnight)

2 tablespoons oil

1 bay leaf

1 teaspoon cumin seeds

1 large onion, finely chopped

1 tablespoon ginger-garlic paste

2 medium tomatoes, finely chopped

1-2 green chilies, slit (adjust to taste)

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon coriander powder

1/2 teaspoon garam masala

Salt to taste

1 teaspoon red chili powder (adjust to taste)

Fresh coriander leaves for garnishing

1-2 tablespoons tamarind pulp or lemon juice (optional, for tanginess)

Instructions:

Preparing Ghugni:

Cook the Peas: After draining and soaking, boil the yellow peas in new water with a little amount of salt in a pressure cooker until they are tender but not mushy, about 3–4 whistles on medium heat.

Make the Masala: heat the oil in a pan. Add the cumin seeds and bay leaf. Add chopped onions and cook till golden after they sputter. Add the green chilies and ginger-garlic paste, and cook for one minute.

Add Spices

1 cinnamon stick

2-3 cloves

2 green cardamoms

1 teaspoon coriander powder

1 teaspoon cumin powder

1-2 teaspoons red chili powder (adjust to taste)

1 teaspoon garam masala

1 teaspoon amchur (dry mango powder)

Salt to taste

Fresh coriander leaves for garnishing

Water as needed

For Serving:

Tamarind chutney

Green chutney (mint-coriander)

Chopped onions

a-Add the cardamom, cinnamon, cloves, bay leaf, and cumin seeds. 

b-Then, add the chopped onions and sauté till golden brown, until they begin to crackle. 

3. Add Spices and Tomato Puree: Fill the pan with the tomato puree. Sauté the oil until it separates. Next, include red chili powder, cumin, coriander, turmeric, and salt.

4. Stir in Chickpeas: Stir in the boiled chickpeas and the cooking liquid.

5. Simmer: After bringing the mixture to a boil, simmer it for ten to fifteen minutes. In the last stages, add amchur and garam masala.

6. Garnish: Add chopped coriander leaves to the chole.
